When recipe testing these waffles, I asked my son how big they should be. He said to make them easy to hold and eat without a fork and knife. Then, he reached out his hand, open palm facing upwards with fingers extended and demonstrated how to hold them. And that was the moment Halfacup Waffles were born.

Homemade waffles are easy and delicious. This waffle recipe uses whole grain flour, giving it a rich, earthy flavor. Because they are a good source of fiber and protein, they will keep you energized and satisfied longer than waffles made predominantly of refined white flour. Finish them off with a layer of nut butter and a layer of sliced seasonal fruit or berries.

Ingredients

  • 1 ½ cups whole wheat flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 tbsp sugar
  • 1 large egg
  • 1 ½ cups lukewarm milk
  • ⅓ cup vegetable oil

Directions

  • Step 1

    Preheat the waffle iron while making the batter.

  • Step 2

    In a large bowl, whisk together flour, baking powder, salt, and sugar.

  • Step 3

    In a separate bowl, whisk together the egg, milk, butter or oil.

  • Step 4

    Stir together the wet and dry ingredients, mix until combined. It’s okay if the batter is a bit lumpy.

  • Step 5

    Pour a one-half cup of batter into the hot waffle iron and cook according to your waffle iron instructions.

  • Step 6

    Top waffles with your favorite ingredients.
