This granola is not just about flavor, but also aroma. It smells like fall. When baking this recipe my home fills with the scent of orange, spices and toasted nuts. I’ve made a double batch of it to give to teachers and neighbors in decorative mason jars for a homemade winter holiday gift. I make sure to hold on to some for myself to sprinkle atop yogurt or frozen desserts for some texture and crunch.

Ingredients
- 1/4 cup avocado oil
- 2 1/2 cups old fashioned oats, dry
- 1 tsp orange zest
- 1/2 tsp almond extract
- 1 tbsp vanilla bean paste
- 1 cup pecans, chopped
- 1 cups coconut flakes, unsweetened
- 3/4 cup maple syrup
- 2 tbsp sesame seeds
- 2 tbsp flaxseeds
- 2 tbsp chia seeds
- 1/2 cup pumpkin seeds
- 1/4 cup brown sugar
- 1/2 tsp cinnamon, ground
- 1/2 tsp nutmeg, ground
- 1/8 tsp cloves, ground
- 1/4 tsp salt
- 1/4 cup raisins
- 1/2 cup dried tart cherries

Step 1
Preheat oven to 300 degrees F. Place a sheet of parchment paper on a rimmed baking sheet and set aside.

In a medium bowl, stir together avocado oil, orange zest, almond extract and vanilla. Set aside.

In another bowl, add oats, pecans, coconut, maple syrup, brown sugar, all seeds, spices, salt and the bowl of orange zest oil. Stir to evenly combine all ingredients.

Using a silicone spatula or similar, spread the granola mixture on the lined baking sheet. Bake for 40-45 minutes until golden brown. Using a mitt and a spatula, carefully stir the granola every 10-15 minutes while baking.

Once done baking, remove from the oven. Stir in the raisins and dried cherries.
Store granola in airtight container in a cool, dry area for up to 6 months.
