Liven up your Meatless Monday or Taco Tuesday with these vegetarian Curried Cauliflower and Chickpea Tacos. I use naan bread as a fun take on this coming together of Indian and Mexican-inspired flavors. Tortillas or lavash bread work equally as well. If you opt to make this recipe vegan, just swap out the Greek yogurt for a non-dairy yogurt.

Ingredients
- 1 head of cauliflower, washed and cut into small pieces
- 1 15 oz can chickpeas, no-salt-added, drained
- 1 tsp ground cumin
- 1 tsp chili powder
- ¼ tsp garlic powder
- ¼ tsp onion powder
- 1 tsp salt
- 2 tbsp fresh lime juice
- 1 tbsp extra virgin olive oil
- 1 tbsp water
- 1 cup red cabbage, finely chopped
- 1 medium avocado, cut into ½-inch cubes
- 4 small whole wheat naan flatbread
- ¼ cup cilantro, chopped
- Juice and zest of 1 lime
- 1 cup plain Greek yogurt
- Salt and pepper, to taste

Step 1
Preheat oven to 400 degrees.

In a large bowl, stir together cumin, chili powder, garlic powder, onion powder, salt, lime juice, olive oil, and water. Stir in cauliflower florets and chickpeas.

Pour sauced cauliflower and chickpeas onto a greased baking sheet. Roast in the oven for 30 minutes until browned, stirring occasionally while baking. Remove from the oven and set aside.

While cauliflower is baking, place yogurt, cilantro, lime juice and zest, and salt and pepper into a blender and pulse or stir together in a small bowl to make the Lime Cilantro Crema. Set aside.

Take each piece of naan and top with cauliflower and chickpeas. Add avocado cubes and cabbage. Drizzle with a spoonful or two of the Lime Cilantro Crema.
Make Ahead Tips
The Lime Cilantro Crema can be easily made ahead of time. In order to make this a vegan meal, simply swap out the plain Greek yogurt for plain non-dairy yogurt.
