Just months after we bought our first home, we had a flood and had to move out for five months for renovations. To keep ourselves amused in our temporary apartment we entered a Cabot recipe contest. A very similar version of this chicken burger recipe using Spicy Pepper Jack cheese was a prize winner! Over the years, we’ve made this burger different ways, but this is what it has evolved into. The secret ingredient in these chicken burgers are the veggies. Anaheim pepper, shallot and cilantro incorporated within keep this lean chicken patty moist and flavorful.

Anaheim peppers are typically more mild than jalapeño peppers, but can vary in heat depending on where it was grown. While California-grown Anaheim peppers may be eight times less spicy than jalapeño, those grown in New Mexico can be just as spicy as jalapeño.

Ingredients

  • 1 pound ground chicken
  • 1 Anaheim pepper, chopped
  • 1 medium shallot, minced
  • 1 bunch bunch cilantro, stems removed and chopped
  • 2 tbsp balsamic vinegar
  • 1 tbsp extra virgin olive oil
  • ½ tsp garlic powder
  • ½ tsp Italian herbs
  • 1 tbsp garlic paste or fresh minced garlic
  • ¼ tsp salt
  • ⅛ tsp black pepper

Directions

  • Step 1

    Chop the Anaheim pepper and mince the shallot, combine and set aside.

  • Step 2

    Prepare the cilantro by removing leaves from the stems, discard stems and chop leaves. Set aside.

  • Step 3

    Sauté shallot and chili over medium heat until tender.

  • Step 4

    In a large bowl, mix ground chicken with cooked shallot and chili, balsamic vinegar, cilantro, garlic, Italian herbs, salt and pepper so all ingredients are well combined. Using your hands, form burger patties. The recipe easily makes four patties, but you may opt to make them a smaller slider size, yielding more patties.

  • Step 5

    Heat olive oil in a pan over medium heat and cook patties for about 5 minutes. Flip patties to cook on the second side for about 5 minutes.

Make Ahead Tips

You can prepare the chicken mixture one day ahead and then form and cook the patties at the time of serving.
