Ingredients
- 1 1/4 cups old-fashioned rolled oats, dry
- 1 1/4 cups almond milk
- 2 tbsp ground flaxseeds
- 1 tbsp chia seeds
- 1 tbsp vanilla paste
- 2 small grapefruits
- 12 oz ricotta cheese
- 1/4 cup shelled pistachios, unsalted
- 2 tbsp honey
- 1 1/2 tbsp grapefruit zest
Directions

Step 1
In a medium sized bowl, add oats, almond milk, ground flaxseeds, chia seeds and vanilla paste. Stir well to. Cover and place in the refrigerator overnight.

In a medium sized bowl, add ricotta, honey and grapefruit zest. Stir with a whipping motion to combine well.

Peel and slice grapefruit as desired.

Arrange overnight oats and whipped ricotta in a cereal or other similar sized bowl. Top with sliced grapefruit and pistachios.
