Green Goddess Pasta Salad

This pasta salad features Green Goddess dressing, a creamy herb salad dressing. You can find pre-made Green Goddess dressing at the market such as the one by Primal Kitchen, which uses avocado oil. If you prefer homemade dressing from scratch, I like this Easy Green Goddess Dressing from Cookie + Kate that uses plain Greek yogurt and fresh herbs.

Ingredients

  • 16 oz rotini or cavatelli pasta, dry
  • 4 cups broccoli florets
  • 1/3 cup Green Goddess salad dressing
  • 1/2 red onion, thinly sliced
  • 1/3 cup green olives, pitted
  • 1/3 cup black olives, pitted
  • 1/4 cup Parmesan cheese, grated
  • black pepper

Directions

  • Step 1

    Cook pasta per package instructions. Drain and set aside to cool.

  • Step 2

    Steam broccoli until crisp tender. Drain and set aside to cool

  • Step 3

    Slice olives and onion.

  • Step 4

    In a large bowl, combine cooked pasta and broccoli, sliced onion and olives, dressing and grated Parmesan. Add black pepper, to taste. Stir to mix well.

  • Step 5

    Keep refrigerated until served.
