Bell Pepper Eggs with Black Beans

Bell pepper eggs are a fun and flavorful take on fried eggs. I find that cooking eggs inside bell pepper rings is easier than cooking them alone because the egg white stays together in the bell pepper ring making it easier to transfer from pan to plate without breaking the yolk. Ingredients

  • 4 eggs
  • 2 bell peppers
  • 1 large avocado
  • 1 lime, cut into wedges
  • fresh cilantro
  • 3 cups no-added-salt black beans, drained (2 15-ounce cans)
  • cooking oil spray
  • salt
  • ground black pepper

Directions

  • Step 1

    In a small saucepan, heat black beans over medium heat until thoroughly heated.  Turn down heat to low and stir occasionally.

  • Step 2

    Wash bell peppers and slice into 1/2-inch to 3/4-inch rounds, seeds and membranes removed. You will need four evenly sliced rounds for this recipe. Place a large lidded nonstick sauté pan over medium-high heat. Pour 1/4 cup of water into the pan and, once hot, add pepper rings to the pan. Cover and allow peppers to cook for about 2 minutes so they are slightly softened.

  • Step 3

    Using tongs, remove pepper rings from pan and place on a plate. Pour excess water from the pan, return pan to the stove and turn heat down to medium. Spray pan lightly with cooking oil. Place two bell pepper rings in the pan and pour one cracked egg into each pepper ring. Season with salt and pepper, as desired. Cover the pan and cook until the egg whites are completely cooked and opaque and the yellow is runny, about 3 to 5 minutes.

  • Step 4

    Uncover the pan and using a spatula, transfer cooked bell pepper eggs to serving plates. Repeat the cooking process in step 2 for additional eggs.

  • Step 5

    Wash and chop cilantro.

  • Step 6

    Wash avocado and cut in half, removing the pit. Slice into 1/4-inch thick pieces with the skin removed.

  • Step 7

    To serve dish, place approximately 3/4 cup of heated black beans on a plate or in a shallow bowl. Place bell pepper egg on top egg beans. Garnish with avocado slices, cilantro and lime wedge. Add more seasoning to taste.
