Chicken Shawarma and Sweet Potato Bowl

There are three main components to these Sheet Pan Chicken Shawarma and Sweet Potato Bowls: 1) sheet pan-prepared shawarma chicken and veggies, 2) Whole Wheat Pita Chips and 3) a cucumber and tomato salad. These parts come together for a balanced meal that is delightful in flavor and interesting in texture.

Ingredients

  • 1 pound skinless, boneless, chicken breast
  • 2 medium sweet potatoes, sliced into 1/2-inch thick pieces
  • 1/2 tsp za'atar
  • 8 ounces cauliflower florets
  • 1 medium red or white onion, cut into 8 wedges
  • 1 tbsp honey
  • 1 tbsp extra virgin olive oil
  • 1 tbsp smoked paprika
  • 2 1/2 tsp cumin
  • 1/2 tsp crushed red pepper flakes
  • 4 cloves garlic, peeled and minced
  • 2 lemons
  • 8 ounces cherry tomatoes, sliced lengthwise
  • 3 Persian cucumbers, chopped
  • 1 cup fresh mint leaves
  • 4 cups arugula
  • salt
  • pepper
  • 1 recipe Whole Wheat Pita Chips

Directions

  • Step 1

    Preheat oven to 425 degrees F.

  • Step 2

    On a sheet pan lined with parchment paper, add sliced sweet potato, cauliflower florets and onion wedges. Lightly drizzle veggies with olive oil and a dash of salt. To sweet potatoes only, add 1/2 teaspoon cumin and 1/2 teaspoon za’atar. Bake for about 40 minutes. Keep an eye on cauliflower to avoid burning.

  • Step 3

    Cut chicken breasts into smaller pieces. In a medium bowl, add honey, 1 tablespoon olive oil, smoked paprika, remaining 2 teaspoons cumin, crushed red pepper flakes, garlic and juice of 1/2 lemon. Stir to combine shawarma sauce. Then add chicken to sauce and coat evenly. Line sheet pan with parchment paper. Using tongs or clean hands, arrange chicken in one layer on sheet pan. Bake chicken for 20-24 minutes until done.

  • Step 4

    Meanwhile, to make salad, add sliced cherry tomatoes, chopped cucumber, mint leaves and arugula to a medium bowl. Squeeze juice of 1 lemon over vegetables and use tongs or fork to gently mix ingredients. Season with salt and pepper to taste.

  • Step 5

    To make Shawarma Chicken and Sweet Potato Bowl, place portion of salad, chicken, sweet potato, cauliflower and onion in each bowl. Add 3-4 pita chips to the bowl. Repeat for each bowl.

Make Ahead Tips

You can make Whole Wheat Pita Chips up to three days in advance or use your favorite packaged pita chips.
